Paneer Bhurji Paratha - Scrambled Cottage Cheese Bread Recipe by Ruchi Bharani [HD] <br />INGREDIENTS- <br />butter <br />steamed carrots & french beans finely chopped <br />capsicums finely chopped <br />onion finely chopped <br />coriander leaves <br />tomatoes deseeded & finely chopped <br />red chilli powder <br />garam masala <br />sugar <br />ginger chilli paste <br />paneer (cottage cheese cubes) <br />onions cut lengthwise <br />all purpose flour paste <br />coriander mint chutney <br />all purpose flour rotis (maida rotis) or readymade tortillas <br /><br />METHOD <br />- Take 1 and 1/2 tbsp. butter and heat it on a round bottom pan. Add the chopped onions once the butter melts. <br />- Add capsicums, steamed french beans, carrots, deseeded and chopped tomatoes. Saute all the vegetables for 1-2 minutes. <br />- Add ginger chilli paste, red chilli powder and a little bit of sugar. Sprinkle coriander leaves. Mix well. Let the mixture cook for 1-2 minutes. Don't overcook them. <br />- Scramble the paneer and add the pieces to the mixture. Mash the mixture a little bit. <br />- Turn off the flame and add salt as per taste. <br />- Empty the stuffing mixture in a bowl. Let it cool. <br />- Spread coriander mint chutney on the centre of the rotis and spread some chopped onions. <br />- Fill the stuffing mixture in the rotis and seal the edges with the help of all purpose flour paste. <br />- Heat up butter on a round bottomed pan. Roast the parathas till they show brown spots. <br />- Chop them into two and serve them with coriander mint chutney.
